Enzyme Therapy and Hormonal Balancing

Ms. Craft: Welcome to Inner Wisdom. Iím glad youíre with us this hour. Iím Carolyn Craft and Iím speaking with Dr. Lita Lee, who authored The Enzyme Cure.
Do you have to take drugs? Just how polluted is our environment? What affect does it really have on our health? Whether or not you suffer from food allergies, colitis, headaches, diabetes, intestinal disorders, cardiovascular problems -- or if you know someone who does -- there is a low-cost, very helpful program that is available.
My guest was originally trained as a chemist. She received a doctorate in chemistry in the late 1960s from the University of Colorado. She has been involved over 30 years in the experience of chemical and medical research. Now she works, and has been for the last 20 years, training in clinical nutrition with individual doctors. She has a very strong specialty in developing nutritional protocols for balancing our body chemistry with a real strong focus on enzyme therapy and hormonal balancing and finding ways to protect ourselves from environmental toxins.
Dr. Lita Lee, thank you for being with us this hour and sharing your wisdom.
Dr. Lee: You are quite welcome.
Ms. Craft: Why donít we begin right at the beginning and talk about what enzymes are and how we can see them helping us with our health?
Dr. Lee: Enzymes are very special proteins and Iím sure everybody has heard of the word protein. But, enzymes are more than just proteins, they are biological catalysts. They have often been called the spark of life. Why? Because nothing occurs in the body without them.
The biggest class of enzymes in the human body is called metabolic enzymes and literally there are hundreds and thousands of these enzymes made in every cell of the body -- if you digest your food, that is. These enzymes are behind everything that we can think of that has to do with living -- talking, walking, behaving and even dying.
Everything that happens in the body has a little enzyme running the show.
Then there is another class of enzymes that Iím sure people have heard of. They are called pancreatic enzymes and there are only about 22 of those and they facilitate the work of digestion in the small intestine, after the food leaves the stomach.
That brings me to food or plant enzymes that are present in all raw foods. And you can take them as supplements. What do these enzymes do? The secret is they predigest foods in the stomach - up to 60 percent of the carbohydrates, 30 percent of the protein and maybe 12-15 percent of the fat in the first 30 to 60 minutes, and thatís before the hydrochloric acid comes out and before the pancreatic enzymes have even thought about digesting the food in the small intestine.
In other words, plant enzymes are a secret to being healthy.
Ms. Craft: How are we going to refocus on our enzymes without becoming chemical engineers or biochemists? What is it about focusing on enzymes that is going to help us?
Dr. Lee: The problem is people eat "dead" food -- enzyme deficient food. They eat nutrient-deficient food because most of our food is grown commercially and that means dead soils, no earthworms, no microorganisms -- but lots of pesticides and very little nutrients. Whatever is in the soil is in the plant. So if you eat plants grown in dead soil, what are you going to get is a dead food. I consider this a major cause of enzyme deficiencies. Even people who get organic food are found to be enzyme deficient because most people cook their foods -- 99 percent of the patients who come to me microwave their food -- that totally destroys everything in the food and it converts all of the proteins into carcinogens and neurotoxins and destroys all of the vitamins and all of the minerals.
What else do they do to get enzyme deficient? They turn on their tap water. It is full of 500 chemicals, including chlorine and fluoride, which destroy hundreds of enzymes in the human body. Itís not just one thing. It is everything we have done to our earth.
Ms. Craft: In looking at the enzyme depletion in our body, where do we begin in understanding what we can do about it? Most of our groceries come from commercially produced farming.
Dr. Lee: Thatís a big problem. But I still believe that we the people have the final call and the final power. I urge people to support the local organic farmer because, the bottom line is, if we donít buy commercial foods, then nobody is going to make them. If we donít buy synthetic drugs, whoís going to make them? Nobody.
One step at a time.
Even in the big, commercial grocery stores, I see a shelf that says health food or organic this or organic that. It is creeping into the mainstream an apple at a time, or an orange at a time.
Ms. Craft: It is important -- even though often some of those foods are more expensive -- to know that we are investing in our health.
Dr. Lee: Absolutely. The most expensive thing on earth that is bankrupting our country is disease.
Ms. Craft: When we look at supporting the organic farmer, is there a way -- can we just know that, when itís certified organic, that we are safe?
Dr. Lee: Youíre safer than you would be buying any other type of food. The taste test is the winner. You take a commercial orange and an organic orange, and you will taste the difference. Iíve never had anybody flunk this test.
Ms. Craft: So if your local producer or your grocery store that is local is not providing organic foods, just make your statement, huh?
Dr. Lee: Yes. I talk to people all over the world and they say, "Where do I get organic foods?" and I say, "You havenít even looked." And they start looking and they find the farmers market, the little organic food store. Most people have access to at least some organic food.
Ms. Craft: In The Enzyme Cure, which is a book you have authored with Lisa Turner and Burton Goldberg who is doing the alternative medicine series, it says that plant enzymes can help us relieve over 36 health problems. What are some of those problems and how do the enzymes help us?
Dr. Lee: For every enzyme deficiency thereís one to 20 conditions. Whatever you donít digest becomes a toxin in your body that causes all of these conditions that I talk about in the book.
Take protease. Protease digest protein. What if you donít have enough protease? A lot of people become vegetarians because they canít digest protein, but they canít digest the protein in vegetables either. I can see this pattern in a 24-hour urine test. Itís not a medical test, itís an enzyme deficiency test. I can see this pattern of protease deficiency in the urine. These people are often very alkaline. When they are too alkaline that means they canít hold calcium in the blood, so they get bone problems. They get anxious. They may take a tranquilizer. They may have immune system problems. They may have colon problems. There is a whole array of problems. Some may have just one problem, some may have them all. Iíve done this for so long, 15 years. When you tell me your symptoms, I see all these little enzymes passing before my eyes. Theyíre like little people, like little workers. They do the work of digestion, absorption and assimilation.
Ms. Craft: Give us some examples of some of the people you have worked with and what happens before and after -- and what is the process, how do they begin?
Dr. Lee: I do a 24-hour urinalysis that was developed by Dr. Howard Loomis of Madison, Wisconsin. I dedicated my book to him. I get urine samples from all over the world. This urine test tells what you canít digest, absorb, assimilate. It tells if your colon is toxic. It tells if you have enough vitamin C and calcium and salt, and it tells if you have an allergy pattern, which everyone has who comes to see me.
Then I ask people questions. What are your symptoms? Do you have insomnia? Do you have attention deficit disorder? Are you constipated? Do you have diarrhea? How is your cholesterol? Are you depressed? Can you sleep at night? All of these symptoms are due to enzyme deficiencies and a hormonal imbalance.
Take a baby that has colic and projectile vomiting. That is very common. I had a baby like that. That was long before enzymes were available. Take the baby to the doctor, and guess what the baby gets -- Valium, one of the most addictive drugs in the country. Or perhaps a diluted solution of hydrochloric acid, neither of which addresses the cause-- poor digestion. You can give that baby plant enzymes and in one day, no more colic, no more vomiting.
Ms. Craft: Are you receiving the same kind of training, the medical training that you received in your chemical training?
Dr. Lee: No.
Ms. Craft: Totally different?
Dr. Lee: Thatís the problem. I went to medical school and I got two hours of nutrition so I decided Iím going to become a full-fledged chemist. Then I noticed that many medical students would take chemistry courses in the summer because they hated chemistry. But to understand the human body, physiology and endocrinology you have to know chemistry.
Ms. Craft: It is a doctorate of medicine -- not to pick on medical doctors because they serve a great, wonderful, purpose -- but the emphasis is more on medicine than it is on actually seeing the chemistry of the body thatís brought to you.
Dr. Lee: I have to say something positive. More and more medical doctors are turning to alternative medicine and enzyme therapy. I have many medical doctors for whom I do urines -- not only for them, but for their patients. So things are changing.
Ms. Craft: When you work with someone, what are some of the wonderful results that youíve seen from the enzyme work?
Dr. Lee: My son had asthma. I gave him enzymes. All asthmatics are sugar intolerant -- that means that they have poor sugar digestion. But most kids live on sugar. Iíve seen babies go to the hospital after Christmas when they were given candy.
I gave him a whole array of enzymes. I emphasized the sugar-digesting enzymes. I gave him an allergy formula because allergies can lead to asthma. There is also a special enzyme for wheezing, coughing and difficulty breathing. So many things can cause asthma, including emotional upsets. I also gave him a thyroid glandular. I never gave him drugs. Heís 22 now and he knows exactly what he needs to do whenever he feels his chest getting tight.
I had a four-year-old boy, whom Iíve never met -- Iíve talked to the mother -- with severe attention deficit hyperactivity disorder. The state was trying to force the mother to put this child on Ritalin. This child had a sluggish thyroid function and he was very sugar intolerant. Plus, his diet was high in junk foods. There is an enzyme formula for sugar intolerance and one for attention deficit disorder and thatís what I gave him, in addition to a thyroid glandular. I recommended a healthier diet. It helped him immensely.
No matter what your possible ailment is, enzymes can help us decrease or even eliminate toxic drugs and allow the body to heal itself.
Ms. Craft: What about sugar?
Dr. Lee: There are three sugar-digesting enzymes -- one for cane sugar, which is sucrose, one for grain sugar, which is maltose, and one for milk sugar which is lactase.
Ms. Craft: Do we need to change the foods that we intake?
Dr. Lee: My diet rules summary has a left side and a right side. On the left side is the junk food, on the right side is organic equivalent, whether it is a refined sugar versus organic sugar cane, or commercial milk versus organic or raw milk. There is a substitute for all the junk that people eat. Then I determine what food they are most intolerant of.
Most people are sugar intolerant whether they eat it or not. Why? Because everything you digest eventually goes to sugar including 46% of the meat you eat. Thatís why I always give people sugar-digesting enzymes Ė sucrase, maltase and lactase. I use several multiple digestive enzymes which are tailored to fit specific digestive needs. You use combinations of all of these enzymes.
Ms. Craft: Do we have to go to a doctor of chemistry like yourself? Who would we go to find out what we need?
Dr. Lee: No. You would go to an enzyme therapist, and they can be a dentist, an M.D., a chiropractor -- they can be anybody on earth who has learned how to use enzymes. Also you can go to the health food store.
Ms. Craft: Do you not need to know your own body to prescribe it for yourself?
Dr. Lee: Yes. In my book you can tell where you need to go. Some people see themselves Ė ĎHey, thatís me.í So they go to the health food store and they try to find the enzymes they need. Some people have tried everything. Theyíve been through health food stores and they are still sick and they donít know why. Or maybe they do know why but they need, perhaps, a stronger formula. These are the people who need an enzyme therapist, an enzyme detective. My formulas are more potent than over-the-counters. I donít see the people who get well in the health food stores. I see the people who have been there and are still sick.
Everybody I know is getting into enzyme therapy. Iím very, very happy about this because I can honestly tell you that I would not be able to help one person who calls me or comes to see me without enzymes.
Ms. Craft: When they first walk in the door, what are some of the questions you ask them?
Dr. Lee: I have a 20-page patient history and I make them fill it out. Some of them donít like it at all. If they donít fill it out I figure theyíre not as interested in themselves as I am. This questionnaire tells all the junk foods that you eat. Whether you eat organic or not. How many times a week do you eat sugar? What kind of sugar do you eat? It also has an enzyme deficiency questionnaire with symptoms for each enzyme. Do you have nightmares? Are you depressed? Do you have mood swings? Are you angry? Does your face hurt? Do you have rashes or skin problems? Acne? Asthma? Constipation? Diarrhea? And so on.
Then I look at this urinalyses test and that really helps me a lot. Sometimes it reveals things the patient doesnít know about. For example, a lot of people have diabetes and donít know it. A lot of people have severe gall bladder problems and donít it.
I put all of this stuff together and develop a nutritional program for each individual. Itís a whole way of life.
Then I tell them theyíve got to stop eating Twinkies for breakfast. Just walk right by the fast-food restaurants. Throw away your microwave oven. Drink pure or purified water.
Itís a whole way of life and they look at they and me say, "Thatís not convenient." And I look at them and say, "Is it more convenient for you to go to the hospital for a month or two?"
Ms. Craft: It seems that many of us want to do much better, knowing what isnít good or what isnít right. Then there is the question, "What do I do? How do I replace those Twinkies for breakfast?"
Dr. Lee: I explain it to the T.
Ms. Craft: So you give them not only a list of enzymes but the appropriate foods, too?
Dr. Lee: Absolutely.
Ms. Craft: To the Twinkie eater, you would recommend what?
Dr. Lee: Throw away anything that is refined. Refined food has nothing in it.
Ms. Craft: In itís place you would add --
Dr. Lee: Whatever you eat, make it whole. If itís a grain, make it a whole grain. If it is milk, make it whole and organic -- and raw if you can get it. If it is animal protein, donít support the commercial animal industry because they treat those animals so inhumanely. I hate animal cruelty and they give those animals drugs, pesticides, hormones and toxic foods. And those animals are sick. And you eat sick animals. Whatever you eat thatís sick is going to make you sick.
Ms. Craft: I was told that goat meat -- out of all the meats -- was a fair meat to eat. Do you know about that?
Dr. Lee: Goats are not as commercialized as cows. I donít think itís necessary to eat cows, but I recommend that if you are going to eat a cow, eat an organic cow. Donít eat one that is fed drugs and soybeans and corn and not allowed to roam the earth. I say that for all foods. Organic chickens and turkeys are good. Goat milk is probably the best milk that a person can drink.
Ms. Craft: I had heard that, too. I have to tell you, though, I tried it -- but I havenít acquired the taste. I thought of that this morning when I was having whole milk -- I would really like to acquire the taste for goat milk. I know itís good for me.
Dr. Lee: Some goat milk taste better than others. When my kids were babies I had this friendly goat farmer nearby. I trooped up to the farm every week and got the most delicious tasting goat milk Iíve ever tasted.
Ms. Craft: It tasted sort of bitter to me.
Dr. Lee: Thatís the wrong goat.
Ms. Craft: Okay. Iím going to look for the right goat, then.
Dr. Lee: Itís called the Nubian. They produce the best tasting goat milk. It tastes sweet like honey.
Ms. Craft: The milk I tasted was almost like I was eating the grass myself, it was so bitter.
Dr. Lee: Thatís the problem. Anything in a can -- forget it.
Ms. Craft: You really do love what you do. You are seeing such a profound difference in peopleís lives. You mentioned the "voice" -- tell us what happens when you see the before and after with your patients.
Dr. Lee: Iím very sensitive to sound, because Iím a sound therapist as well as an enzyme therapist. To me, everything is sound. When a person is sick I can hear it. For example sugar intolerant people can actually have speech problems. Enzymes can correct this. Also, women who are hypothyroid can have a deep or hoarse voice. I can hear that voice come up to a higher level, a more feminine level, just by giving a thyroid glandular.
Ms. Craft: That is sort of your intuitive knowing that enters in your work with your patients.
Dr. Lee: Yes, I can hear it with my ears, but you can measure it. You can see it in a voiceprint, on a computer, just having a person talk into the computer. You can see everything. You can see sickness. You can see infection. You can see missing frequencies. I am referring to the form of Bioacoustics that was researched and developed by Sharry Edwards. She has amazing ears that can hear stressed notes or frequencies in your voice. I cannot hear these stressed notes, but I can tell that there is a stress.
Ms. Craft: Is this your gift, or is this something someone can develop in understanding the voice, their own voice, in what is happening in their body.
Dr. Lee: I think everyone can do exactly what they want to do, but I also believe weíre guided. I feel that we are guided by Spirit. I feel that God and the angels kicked me in the butt and said, "Lita, do this."
When my twins were three, I watched a child their age die in the hospital of brain cancer, which he was born with because his mother was exposed to Paraquat -- a pesticide -- during her pregnancy. All of the animals died, but she thought nothing of it. That so disturbed me because I was very close to the child and the family and I was terrified. I thought, my kids are only three years old, are they going to be next? When I was pregnant, I used to hold my breath when I was running when I passed a pesticide field.
The unnecessary death of this child was such a profound experience that it made me dedicate my life to children and to the healing of the earth. If the mother had lived near an organic farm, that child would be alive.
Ms. Craft: When you say she was exposed, what kind of exposure did she have?
Dr. Lee: She was living in a place where they sprayed the pesticide. And whatever you spray you breathe.
Ms. Craft: She was living in the country?
Dr. Lee: She was living in Hawaii near a farm and they sprayed on the farm.
Ms. Craft: What do you recommend for someone that is experiencing that and knows that might be affecting the child or oneself. What do they do?
Dr. Lee: I recommend, "Get the heck away."
One of my questions on my patient history is, "Do you use pesticides?"
I have seen people come to me feeling good and two weeks later they are sick, they have rashes and I say, "What have you been doing?" And they say, "Well, I just sprayed my roses." It is a matter of consciousness. We do not need these chemicals. Pesticides cause cancer and are very estrogenic. A healthy plant doesnít need pesticides.
If you have a bad diet, you have no reserves. If you donít digest your food, you have no reserves. I have many people who have to wear a mask or cannot leave their houses because they have environmental illness.
Itís all the same picture. Take your enzymes. Eat pure organic foods as best you can. When you are pregnant, treat that child as a sacred being - eat a wholesome organic diet, digest your food and the child will come out healthy.
Ms. Craft: When we become conscious and aware, those alternative ways start becoming available. They start revealing themselves. A lot of the ancient, wise ways of our ancestors who lived naturally with the land, those things still work. But we have to look for them rather than the easy way out.
Dr. Lee: All of this started during the Industrial Revolution. Thatís when they started using pesticides and refining bread so that the flour would last longer. Itís adversely proportional to human life -- shelf life versus human life.
Ms. Craft: Iím finding that there is less and less in a grocery store compared with a health-food store. You have to be willing to try some of the products that may not have the smells, aromas, or the quick action as some of the food that is loaded with chemicals, that are more damaging to us.
Dr. Lee: You wouldnít believe what they put on commercial fruits and vegetables -- maybe 20 different chemicals.
Ms. Craft: In order to preserve the life.
Dr. Lee: And make them look pretty.

Ms. Craft: Weíre back. If we are in a place where itís difficult to either grow or have access to organic foods -- what do you recommend? Is there a particular way to wash them or take of them to eliminate some of the pesticides?
Dr. Lee: I would recommend that everybody wash everything. You can use a very nice formula called grapefruit seed extract -- itís named by various names in health food stores.
No matter how clean you get them, they are still going to contain pesticides inside. But, at least you can wash some of them off the skin.
Because commercial foods have far less nutrition, and less enzymes, it would be wise to take plant enzymes as supplements when you eat and also take some type of concentrated food, like herbal tonics. I donít use isolated vitamins, minerals and amino acids. I like the foods that God gave us. And there are so many of those on the market that will make up somewhat for what you are missing in the food.
Ms. Craft: Are there any foods in particular that can help with enzyme deficiencies?
Dr. Lee: All organic, raw foods help with enzyme deficiencies. In particular, though, there are two groups of foods that people shouldnít eat raw. One is raw broccoli, cauliflower and cabbage, like coleslaw. These contain thyroid inhibitors that must be destroyed by cooking. I always have to say this because everybodyís eating them raw. The other category is raw seeds, nuts, grains and beans. They should be either soaked or toasted because they contain protease inhibitors. I see people get sick eating a lot of those.
Ms. Craft: You said also that it is not very difficult to grow your own, that you donít need a lot of room. Give us a picture of what that looks like.
Dr. Lee: I know people who have a very small plot of land. If people would look in these food places or bookstores that cater to the earth, there are ways of growing vegetables and fruits in a more concentrated place. I know more and more people who are plowing up their backyards. Or there are co-ops. Many families come together and they take turns -- they get a big plot of land and they take turns farming. Itís possible!
Ms. Craft: What happens when you take enzymes on an empty stomach?
Dr. Lee: If you take an enzyme on an empty stomach, the enzyme will go right into the blood, and just like Pac-man, will seek and destroy whatever it likes. For example, protease like to eat dead, toxic debris. It will eat protein capsid off of certain viruses. It helps clean up the blood. Iíve seen people pass worms taking proteases. Each enzyme has a very specific assignment.
Ms. Craft: How much does our biological history affect us versus the toxic environment and the pesticides and so forth?
Dr. Lee: Everybody has genes, but the baby is formed by what the mother not only eats, but digests. If the mother eats poorly -- or eats well but does not digest what she eats -- the baby is going to come out sick. That is why weíre seeing so many sick babies -- diabetes, and asthma, and terrible skin conditions.
I have a lot of women who are infertile until they go on this program. I have a 45-year-old woman, now pregnant for the first time, without taking fertility drugs. She called me when she discovered she was pregnant -- sobbing -- she was so excited. And all I did was give her enzymes, a thyroid glandular, natural oral progesterone plus changed her diet. And she got pregnant naturally for the first time in her life.
Ms. Craft: To reverse the nutritional and enzyme deficiencies, some of the lifestyle changes we can make are -- as a recap --
Dr. Lee: This is a way of life and it is not simple or convenient.
- Eat organic foods.
- Eat fresh foods, raw when possible, excluding raw seeds, nuts and raw cruciferous vegetables.
- Drink pure water.
- Donít microwave anything, not even water.
- Take your enzymes.
- And bless the earth.
Ms. Craft: I know we have just touched the surface. This is work you have been doing for many, many years. There are so many things that are included in "The Enzyme Cure." We urge our listeners to resource this for themselves and to listen to their own bodies and seek out the ways they can be helped through enzymes or whatever it is they need.
You really enjoy what you are doing. What is on the horizon for you?
Dr. Lee: Combining enzyme therapy with sound therapy.
Ms. Craft: A whole new career!
Dr. Lee: Thatís right.
